Fermentation ~ Preparations and Health Benefits
Every traditional diet in the world includes some type of fermented food or beverage as part of their culinary tradition. We have only begun to uncover the many health benefits that these fermented goodies offer to our entire inner ecology. In this class, we will explore the basics of fermentation, why and how it works, and how these concepts can be applied to many different fermentation practices. We also learn about the many health benefits of fermented foods and ways to incorporate them into the diet as food and medicine.
Through discussion and demonstration, this class will cover simple and delicious preparations techniques for a variety of different lactic acid ferments. We will cover preparation techniques for vegetable ferments including sour kraut, kimchi, lacto-fermented pickles and relishes and non-alcoholic fermented beverages such as kvass. Throughout, we will discuss the differences between wild fermentation practices and using different culture starters.
There will be lots of fermented foods and beverages to taste and recipes to try out at home.
Brittany Wood Nickerson ~ Community herbalist, health educator and cook. Brittany brings extensive knowledge of nutrition, cooking and using food as medicine to her training in Western, Ayurvedic and Chinese herbal medicine. Her treatment and teaching approach emphasizes health and healing as an empowered relationship between body, mind and spirit. Brittany runs Thyme Herbal in Amherst, Massachusetts where she maintains an herbal practice and teaches workshops and apprenticeship programs; she also teaches women’s health at the University of Massachusetts. Brittany is the organizer of the Northampton/ Amherst Herbal Meet-up group and co-organizer of Green Nations Gathering.
