Rainbow Chard, Blueberry & Rose Salad
Serves 6
This stunning salad is a feast for the senses—shimmering in color, kissed with floral fragrance, and bursting with nourishment. To ensure purity and safety, we recommend using rose petals from your own organically grown roses or sourcing them from a trusted organic grower.

Salad
1 large bunch rainbow Swiss chard (or any seasonal salad greens)
1 cup blueberries
½ cup raw, sprouted sunflower seeds
2 tablespoons chopped chives
Dressing
¼ cup fresh-squeezed grapefruit juice
2 tablespoons fresh-squeezed lime juice
2 teaspoons local honey
¼ cup unrefined olive oil
2 tablespoons fresh chopped mint
Salt & pepper to taste
Garnish
Fresh petals from 2 organic roses (or)
¼ cup dried organic rose petals
Instructions
Prep the greens
Rinse and dry the chard. Taste the stem for tenderness—if chewy, compost or save for a future cooked dish. Tear or chop the leaves into bite-sized pieces and place in a large serving bowl.Add salad ingredients
Toss in the blueberries, sunflower seeds, and chives.Make the dressing
Combine all dressing ingredients in a screw-top jar and shake vigorously until well blended.Dress the salad
Drizzle the dressing lightly over the salad. Toss gently with your hands, massaging the greens and playfully squishing a few blueberries to release their juice.Garnish with roses
Sprinkle fresh or dried rose petals over the top just before serving.
